Laver les dattes tr\u00e8s rapidement ou seulement les essuyer, les \u00e9noyauter et les couper en deux dans la longueur.<\/li>\n<li>Cuire le couscous une premi\u00e8re fois \u00e0 la vapeur de deux litres d&rsquo;eau bouillante. pendant une vingtaine de minutes, le retirer du feu et le verser sur un plateau. D\u00e9faire les mottes, a\u00e9rer les grains, les additionner de raisins secs, m\u00e9langer, remettre le tout dans le couscoussier, adapter et luter ce dernier \u00e0 la marmite pour une deuxi\u00e8me cuisson de 20 minutes.<\/li>\n<li>Une fois le couscous cuit, le verser dans un plat de service, l&rsquo;a\u00e9rer, le brasser avec quatre ou cinq cuiller\u00e9es \u00e0 soupe d&rsquo;huile, le dresser en d\u00f4me ou \u00e0 plat, le saupoudrer de sucre, le d\u00e9corer avec les dattes et le pr\u00e9senter chaud ou
